Healthy and Easy Oatmeal Pancakes

Ingredients
Pancakes
- 1 cup oatmeal (uncooked).
- 200 ml. almond milk.
- 1 egg.
- 1/2 teaspoon cinnamon.
- 1 teaspoon vanilla essence.
- 1 teaspoon baking powder.
- 1 teaspoon honey or sweetener (optional).
- 1 tablespoon butter or cooking spray oil.
Cooking Instructions
Before making these delicious oatmeal pancakes, the first step is to get all the ingredients separated and ready.
First in a small bowl mix all the dry ingredients the oatmeal with the cinnamon and the baking powder.
In another bowl or cup mix the almond milk with the vanilla essence.
In a blender or food processor, add the cup of oats and grind for a few minutes until you get an oatmeal flour like the one shown in the photo.
Then add the rest of the ingredients in the blender and mix until smooth around a minute.
Heat skillet over medium heat. Once warmed, spray with non-stick cooking spray or butter in. Pour pancake mix into skillet in round circles.
Cook for 2-3 minutes on one side. Turn over and cook for another 1-2 minutes.
Drizzle with real maple syrup or honey and toppings of choice. I added strawberries, toasted almond slides and chocolate chips.
Serve & enjoy!
RECIPE NOTES
Storage: The pancakes can be refrigerated in an airtight container for up to 3 days or frozen for up to 1 month.
